Veg Biryani

Ingredients:

Basmathi Rice 1cup
Cauliflower pellets: 1 cup
Beans: 1cup( cut about 1 inch long)
Carrot: 1 cup(cut about 1 inch long)
Green peas: 1cup
Onion: 1 big(sliced)
Green chillies: 4-5 slit long
Biryani leaf: 1-2
Shajira: 1/4 tsp
Cloves:1-2
Patta/dalchini: 1/2 inch piece
Elaichi: 1-2
Kaju:10-12
Coriander
Pudina
Oil:1 tsp
Ghee/Dalda:1 tsp
coconut milk:1 cup
Salt to taste
 Food color: orange 1 pinch mixed in milk/water
Procedure:
  •  Soak basmathi rice atleast 1/2 hour before cooking
  • Heat oil+ ghee and add kaju, biryani leaf, shajeera, cloves, patta, elaichi and fry till golden
  • Add onions and green chillies and fry till golden brown
  • Add all vegetables and fry 
  • Add coconut milk and water (both together should be double the quantity of rice)
  • While the water is boiling add basmathi rice and salt.
  • when the basmathi rice is 3/4 cooked add coriander and pudina
  • cover the rice with lid and cook on low flame till rice is done
  • Add the food color drops randomly
Veg biryani is ready to be served.
Serving instructions: tastes better with Mixed veg curry or Butter paneer masala or Chole curry or raitha.
